About the Chef:

Chef Dennis Peralta – Executive Chef, City Garden Grand Hotel



Chef Dennis Peralta is a 23 year veteran of the Culinary Arts with Posts held at notable establishments around the world, including a three year stint learning and working under father and son Michelin Star Awardees, Chef Daniel and Chef Stephanie Chambon. Chef Dennis’ vast experiences allowed him to get a firm grasp on international flavours including Asian, Continental, Mediterranean, Fusion, and Australia Rim Cuisines.

On his previous careers, Chef Dennis worked with prestigious companies in the hotel and restaurant industry. Few among his noteworthy working experiences, he has work for five years in Resorts World Manila (Maxims Hotel) as Executive Sous Chef – Executive Chef from August 2010 to August 2013 and became Director for Culinary from August 2013 to March 2015. He has served as the Vice President of the Hotel and Restaurants Chefs Association of the Philippines (HRCAP) and has awarded as coach at the 2012-2014 National Food Showdown Competition. He was also a celebrity chef in GMa’s 7 morning show Unang Hirit and was a Culinary Consultant Hunt for Hunts – Universal Robina Corporation in the year 2004. With all his experiences, Chef Dennis truly established his name in the industry.


Currently the Executive Chef of City Garden Grand Hotel, Chef Dennis excitingly introduces his idea of a Banchetto dining in the hotel’s roof deck bar and restaurant, the Firefly Roofdeck, featuring Filipino street food cuisines. His idea was inspired by Larsian Barbecue, a food haven and a tourist attraction as well in Cebu City, which has several barbecue stalls sells sumptuous yet affordable grilled dishes.

City Garden Grand Hotel welcomes their new Food and Beverage Manager, Mr Johnson Del Valle. A truly experienced man and enthusiastic professional with more than 14 years of experience in hospitality industry. He has established an outstanding records on Cruise Ship, Traditional Hotel, Hotel Casino and Restaurant environment. He is a seasoned F&B Operations Manager with demonstrated history of working in the leisure, travel & tourism industry. Skilled in Hospitality Management, Pre-opening, Food & Beverage, Casino gaming, Customer service and successful track record in Cruise ship, strong operations professional with a Bachelor’s degree focused in Hotel and Restaurant Management.

Before joining City Garden Grand Hotel, he had work in hotel and restaurant companies here and abroad. He start his career at Raffles Hotel in Singapore, joined onboard at Holland America Line – five star cruise ship from 2003-2013, wherein he hone and familiarized himself in the food and beverages industry.

In 2014, He worked at NIU by Vikings, a fine dining buffet restaurant, as a Bar and Restaurant Manager. After a year, he transferred to City of Dreams Manila where he worked as a Food and Beverages Operations Manager in Chaos Night Club and Pangaea Ultra Lounge. Tasting Hugel Wine With Winemaker Etienne Hugel



Altasian winemaker Etienne Hugel regaled guests June 6 when he led the sampling of four unique wines by Hugel & fils from the renowned winemaking region of Alsace, France. Generations of the Hugel family have resided in the village of Riquewihr in Alsace, France, For 375 years, the Hugel family has been carefully crafting wines in this region.



Hugel is a vastly successful family business, with Etienne leading the winery as a 12th generation winemaker. The winery is one of the most famed in Alsace, having earned poioneer status since wway back in 1639. The Hugel family has been recognized for their winegrowing skills in history and until present day, delighting both seasoned wine lovers and casual wine drinkers for decades.

Hugel wines from Alsace are a shining example of what true winemaking craftsmanship is. Etienne flew to Manila to host Planet Grapes' third winemaker event of the year. The company is amrking its brand's second year anniverssary. Showcased during the special event were:



- 2011 Hugel Pinot Gris Tradition - Engagingly fresh, crips open bouquet of flowers and fruit, slightkly mineral and distinctly Riesling. Notes of white peach, green apple, lemon balm, lime blossom, wild hop flower, and fressh moss.

-2012 Hugel Riesling - Thirst-quenching, dry, livbely, fresh, and easy to enjoy, with great elegance and drive. Flavors of green apple, gooseberry, citrus, grapefruit, lime with spring blossom, elderflower, and primrose.

-2008 Hugel Riesling Jubilee - Aomas of yellow peach and apricot with a mineral touch that leaves no doubt that this is a Riesling from a fine terrior. Hugel Riesling Jubilee is an agreeable dry white that possesses remarkable finesse and elegance.

-2012 Hugel Gewurztraminer - Harmonious flavors and aromas of flowers and fruits such as rose, mignonette, jasmine, mango, litchi, and passion fruit. This refreshing dry wine also has some spice characteristics such as cardamom, saffron, and licorice. Gewurztraminer "Hugel" Jubilee is produced from strictly selected grapes from Hugel & Fil's own vineyards in the best vintages. It is best enjoyed on its own; after five to eight years, its quality will remain intact from one generation to the next.



The exquisite Rieslings and Gewurztraminer were paired with special selections from the Planet Grapes menu. The food was chosen to highlight the flavors of the wines to show how food and wine can interact and enahance each other. The delicious food options prepared by Planet Grapes Executive Chef Jonathan Bautista included fresh mixed saklad, quail eggs, squid balls, Thai spiced crab cakes, and Planet Grapes' turon trilogy, among others.

The guided free-flowing wine tasting was first held June 5 at Planet Grapes in River Park, Festival Supermall, Alabang, Muntilupa City. Planet Grapes is where the intimidating walls of fine dining and complicated wine pairings come down, and you can discover just how well wine goes with the food you already knew and love.

almost universal as it is suited to great number of occasions.

THE VINTAGE

Rarely have we seen a vintage subject to so many variations in the weather.

The season started late with a damp spring and coulure, causing a smaller than usual crop.

High temperatures and exceptional summer weather brought the grapes to perfect levels of maturity.

Right from the start of our harvest on 1 October the grapes were very healthy and ripe, and so 2013 was a 

classic Alsace vintage of intense, pure, well balanced wines. Uneven weather at the very end of the harvest 

prevented any significant production of Late Harvest wines.

QUICK VIEW

This wine revives an ancient Alsace tradition that wines assembled from noble grape varieties were called 

"Gentil". Gentil "Hugel" allies the suave, spicy flavor of Gewurztraminer, the body of Pinot Gris, the finesse 

of Riesling, the grapiness of Muscat and the refreshing character of Sylvaner. 

VINEYARDS & VINIFICATION

A kaleidoscope of grapiness, produced exclusively from hand harvested grapes in predominantly clay and 

limestone vineyards, from a dozen of the most favored localities in and around Riquewihr. A cool and long 

growing season gives this unique dry wine great finesse and unequalled drinkability. 

The grapes are taken in small tubs to the presses, which are filled by gravity, without any pumping or other 

mechanical intervention. After pressing, the must is decanted for a few hours, then fermented in 

temperature-controlled barrels or vats (at 18 to 24°C). The wine is racked just once, before natural 

clarification during the course of the winter. The following spring, the wine is lightly filtered just before 

bottling, and the bottles are then aged in our cellars until released for sale. 

The whole production of this wine is closed with DIAM the cork without the risk of cork taint.

Bright, silvery sheen, pale green colour, fresh, lively and youthful with an elegant aspect.

Attractive, flattering bouquet, open and forthcoming, quite aromatic, scented, floral and fruit-driven: 

cardamom, lemon balm, rose, lime blossom, cherry blossom and sweet almond. Harmonious and well-
rounded, with a nicely ripe - yet not over-ripe - grape character.

On the palate, the wine is dry, generous, soft and supple, almost juicy, filling the mouth, showing good 

structure but also a nice, fruity, aromatic finish.

A wine with all the hallmarks of a fine, sunny vintage, yet with no loss of finesse.

Enjoy it now, or within 3 years, as an aperitif or serve it at 8°C with fish, grilled, pan-fried or in sauce, red 

mullet, turbot, pike-perch, lobster, crab, and certain cheeses : comté, reblochon,

dishes flavoured with oriental or Indian spices.

Gewurztraminer 2012 

The great speciality of our region. Only in Alsace does the aromatic expressiveness of this variety attain 

such summits. Spicy and suave, it can be enjoyed on its own, but makes a marvellous accompaniment to all 

rich, spicy dishes, smoked fish. 

THE VINTAGE 

12 days of bitter cold in February (-18°C), budburst early April, flowering spread over 3 weeks. 

Damp early summer but superb August. Harvest began on 24 September. Superb grapes. 

Patchy weather during part of the harvest then fine sunny intervals. Fine well-balanced classic wines, 

similar to 2011 but richer and with more depth, yet already accessible. 

Hugel did not make any SGN in 2012. 

QUICK VIEW 

Originally from northern Italy, this is the emblematic grape of our region due to its slow maturation with 

cool nights giving its full varietal expression. Dry but intensely aromatic. 

VINEYARDS & VINIFICATION 

Made exclusively from hand harvested grapes from predominantly clay and limestone vineyards, in a 

dozen of the most favored localities in and around Riquewihr. A cool and long growing season give this

unique dry wine great finesse and unequalled intensity.

Promisingly attractive colour, intense, young and lively with hints of pale green and straw yellow, it is 

bright and clear with unctuous tears that indicate a full body. 

Soft, aromatic, scented bouquet, showing opulence and body, flowers and fruit: rose, mignonette, jasmine, 

mango, litchi, passion fruit, and some spice : cardamom, saffron, liquorice stick. 

Dry on the palate, but round, soft, nicely harmonious and mouth-filling, with a long, rich agreeably 

aromatic finish. A food wine that will match a wide variety of dishes. 

Enjoy it now or within 2 or 3 years. Serve it chilled at 8°C as an aperitif, or with spicy dishes, Chinese, 

Moroccan, Indonesian, with lobster, crayfish tail, or with strong cheeses like Munster or Maroilles, or with 

white meats, veal, pork and game birds like pheasant or partridge. 

Pinot Gris Tradition 2011

Pinot Gris truly dry and gastronomic which reveals itself at the table! Rich and rounded, although still dry, it 

is ideal with terrines, white meats and fish in sauce. Of all the Alsace varieties, Pinot Gris has the greatest 

ageing potential.

THE VINTAGE

Harsh winter of 2011 with 26 days below zero. Early budding on April 7, May warm and dry and flowering 

15 days ahead of time. Summer cool, damp and gloomy. Return to idyllic weather two weeks before harvest 

started on September 12, without any precipitation from beginning to end. Excellent maturity in a fair size 

crop with soft acidity. Wines already charming, easy to approach and early to drink soon after bottling. 

QUICK VIEW

Rich and full but still dry, it perfectly matches with terrines, white meats and fish in sauce.

The most discreet of all varieties in primary aromas, it enjoys the best aging potential.

Very attractive to the eye, a generously intense colour, star bright, concentrated straw and lemon yellow, 

with a hint of pistachio green.

The bouquet is a treat, a well-balanced range of aromas, acacia honey, apricot, zan, liquorice, fresh almond, 

greengage and lightly smoked brioche. 

Perfectly dry, yet soft, fleshy, juicy and full-bodied. A long, tasty finish, with depth and texture. 

Already drinking well, it can be enjoyed now or over the next three years. 

A beautiful wine of fine character, for gastronomic dishes of sea or river fish in crayfish or lobster sauce, or 

with spicy food like lamb curry, red mullet fillet with curcuma, monkfish with saffron, but it will also go well 

with poultry, pheasant, white meats, veal chop with wild mushrooms, game terrine, duck foie gras...



Riesling 2012 

Totally dry with high natural acids. This famous grape celebrated in all the Rhine valley combines great 

elegance, finesse and minerality. Our most gastronomic wine for most fish and seafood dishes and many

THE VINTAGE 

12 days of bitter cold in February (-18°C), budburst early April, flowering spread over 3 weeks. 

Damp early summer but superb August. Harvest began on 24 September. Superb grapes. Patchy weather 

during part of the harvest then fine sunny intervals. Fine well-balanced classic wines, similar to 2011 but 

richer and with more depth, yet already accessible. Hugel did not make any SGN in 2012.

Riesling is the Pinot Noir of white wines! It is our most demanding variety as it is also the latest ripening. 

Dry and elegant, it expresses itself best on our steepest slopes with the most complex minerality.

True to Hugel family tradition, this is a fine, thirst-quenching Riesling, dry, lively, fresh and easy to enjoy, 

with great elegance and drive. 

Beautiful pale green colour, bright and youthful. Fresh, clean lively aromatic expression. 

Attractive fruit-driven taste of green apple, gooseberry, citrus, grapefruit, lime, with spring blossom, 

elderflower and primrose. 

A nice wine to serve chilled at 8°C as an aperitif, or to start a meal. 

Drink it now or within the next two years with all seafood, shellfish, crustaceans and fish, raw, marinated 

or sushi, and with river or sea fish, poached, grilled or smoked. 



Riesling Jubilee 2008

It's our own interpretation of the expected quality of a great Schoenenbourg, famous since the XVIIth 

century. Profound, suave and with a great minerality, it will still improve for years and keep for decades.

THE VINTAGE

Climatic conditions were a carbon-copy of the excellent 2007 vintage. Budburst at the end of April was quite 

late, but May was warm and sunny so flowering began on 15th June and took more than a fortnight to 

complete.

July and August were particularly cool with hardly any rise in temperature, but in mid-September the Indian 

Summer arrived without a drop of rain. The sky stayed bright but temperatures were relatively cool.

As a result, the grapes ripened slowly but fully, perfectly healthy and with excellent acidity. In late October 

we harvested VT and SGN wines with historically high levels of sugar and acidity. The 2008 Alsace vintage 

was already born great but may prove to be exceptional.

Great classic Riesling which starts to show its promisses but which will gain in complexity for 8 years or more. 

Its minerality and long complex aftertaste will make it the ideal partner to noble fish or seafood dishes.

VINEYARDS & VINIFICATION

Produced in a selection of the finest plots of the Hugel estate in the heart of the grand cru Schoenenbourg. 

This fantastic historical terroir has been almost exclusively devoted to Riesling for centuries. Keuper, marl, 

dolomite and gypsum, rich in fertilising agents, overlaid with fine layers of quaternary siliceous gravel, 

Vosges sandstone and Muschelkalk, with at its eastern extremity outcrops of Lias marl limestones. 

The grapes are taken in small tubs to the presses, which are filled by gravity, without any pumping or other 

mechanical intervention. After pressing, the must is decanted for a few hours, then fermented in 

temperature-controlled barrels or vats (at 18 to 24°C). The wine is racked just once, before natural

Deep pale straw gold colour enhanced by some green hints, attractively bright and lively, it clings to the 

glass.

Its subtle fruit bouquet of yellow peach and apricot is already nicely open and expressive with a 

characteristic mineral touch that leaves no doubt that this is a Riesling from a fine terroir, a nice rocky 

minerality with a whiff of terpene and white truffles. 

An elegant, agreeably dry wine of character that is well structured and complex, with good aromatic 

persistence.

A very fine classic example of a Grand Cru Schoenenbourg Riesling from Riquewihr. Ready to be enjoyed 

and appreciated now, but will keep 3 to 5 more years. Serve now at 8°C with shellfish, seafood, smoked 

fish, eel, herring or after 3 or 4 years with fish, baked or in sauce, turbot, monkfish, lobster, crayfish. A 

very gastronomic wine.

The Alsace Wine Region: Outstandingly Food-Friendly Wines


Alsace is situated with the Vosges Mountains to the west and Rhine River in the east. The majority of their vineyards is concentrated in a narrow strip on the eastern slopes of the Vosges, which provides a good balance of temperature, soil drainage and sun exposure to grow excellent wines. Alsatian wines are typically fine white wines with intense, fresh aromas and uninhibited flavors. Their outstanding wine characteristics come from the beneficial climate, soil and overall terroir. Alsace enjoys low rainfall and high levels of summer sunshine with such a variety of soils (limestone, granite, clay and volcanic, among others) that experts say soil composition is different every 100 feet.


Although some vineyards in Alsace produce red wines, this wine region is predominantly known for its outstanding white wines, such as Riesling and Gewurztraminer. Due to Germanic influence, many of their wines are labeled by varietal, with their main grape varietals being Sylvaner, Pinot Blanc, Riesling, Muscat, Pinot Gris, Gewurztraminer and Pinot Noir. According to the Alsace Wine Route, the characteristics of the varietals from this region are;


-The Sylvaner d’Alsace: This is a light and fresh wine with a subtle fruity flavour. It goes perfectly with fish, seafood and charcuterie.

-The Pinot Blanc d’Alsace: Balanced and often fruity. It provides a light acidity mixed with aromas of violet or iris. A very subtle wine that can accompany most dishes.

-The Muscat d’Alsace: This dry wine offers a peppery sensation, mixed with powerful aromas of fresh grapes and fruits. It can be enjoyed as an aperitif and is a perfect match for asparagus.

-The Riesling d’Alsace: A dry and characterful white wine, it gives off citrus aromas, sometimes accompanied by mineral or floral notes. It is perfect for livening up sauerkraut, white meats and fish.


-The Pinot Gris d’Alsace : This is a full-bodied, round and balanced wine. With moderate acidity, it gives off aromas of undergrowth and yellow fruits. It goes perfectly with foie gras, poultry or game.

-The Gewurztraminer d’Alsace: Much appreciated for the richness of its bouquet, this wine is full-bodied and robust. It develops aromas of honey or exotic fruits and goes very well with desserts, cheeses and exotic cuisines. It is an excellent aperitif.

-The Pinot Noir d’Alsace: This grape variety can produce two different wines: the Pinot Noir rosé and the Pinot Noir red. The Pinot Noir rosé is light, subtle and tart. It evokes the fragrances of red fruits. The Pinot Noir red gives off aromas of cherry or smoke.


Both wines accompany red meat, soft-rind cheeses and charcuterie. All Alsatian wines are appellation wines, which mean they are defined and protected by French wine laws to ensure consistent quality. Alsace belongs to one of 53 Appellations d’Origine Contrôlées (AOC), 51 of which are Grands Crus. In addition to their excellence, Alsatian wines are renowned for being versatile when it comes to food pairings. They go delightfully with everything from Mexican to Asian cuisine.

Who is Etienne Hugel?




Etienne Hugel, married to Kaoru Hugel, is the winemaker for Hugel & Fils, a 100 percent family-owned and fully self-financed winery with winegrowing roots that date back to 1639. The Hugel family comes close to royalty in the wine world, with wine cellars under 16th century buildings and barrels that are more than a century old. Hugel works with the famous S. Caterine cask (dated 1715), which is the oldest working cask according to the Guinness Book of World Records. Etienne is the 12th generation co-proprietor for Hugel & Fils, and makes it a point to travel around the world to support his international distributors.


The international acclaim of the winery has flourished under Etienne with 90 percent of their wine exported, and in fact, Hugel sales in Japan top sales in France. Although their winery is known for their Riesling and Gewurztraminer, Etienne states that he is a Champagne drinker. He enjoys Pol Roger and Bollinger, and also collects Bordeaux, Burgundy and Rhone wines. He states that he also enjoys German wines, such as Egon Muller, JJ Prum and Dr. Loosen. Etienne’s family has devoted generations to establishing the Alsace region, Riquewihr (where Hugel & Fils was first founded) and promote high-quality wines from the noble grape varieties. He is on track to making Alsace wine the white wine of the century.
